As early as in 1177, Pope Alexander III. confirmed the Monastery’s ownership of vineyards in the vicinity. Over the centuries, the Monastery has received more land and vineyards, via the usual Church channels. At their gift shop they cell their wines, grappas, preserves, and other products such as Sylvaner moisturizer. This Pinot Nero, or Blauburgunder as Alto Adige is located in nearly Austria sources it’s fruit from local farmers as well as the Monastery vineyards, is fermentation on the skins in stainless steel punch-down tanks for 15 days, and goes through Malo and maturation in 60 hL oak casks. The result is a fuller style of Pinot, loads of sour cherry, plummy and earthy, with elegant, velvety tannins.
