Tiago Sampaio grew up in his grandfather’s vineyards his farm and his curiosity and incurable fascination eventually led him to a PhD in Viticulture and Enology in Oregon where he learned a lot about modern winemaking philosophies, quite different than the tradition winemaking he was used to in his home in Portugal. Tiago started Folias De Baco in 2007 in the Alto Douro region, a challenging place with schist and granite soils, and vineyards at an altitude of 500-700m. He combines modern techniques with traditional styles, his Uivo Tinto is a fantastic example. A field blend of over 20+ organically farmed indigenous varietals that are over 80-years-old! Aged for 36 months in older French and Chestnut Oak, this wine has loads of ripe blue and black fruit, savoury herbs, warm spices. A little lighter in body than the wines you usually go for, I thought this would be great option to introduce you to.
