Jo Pithon launched the original domaine in 1978 guided by low interventionist principals, which were completely unheard of at the time. Focusing exclusively on organics and biodynamics in the vineyard and the cellar. The estate as it is know today was created in 2008 by Jo Pithon, Isabelle Pithon, Joseph Paillé and Wendy Paillé. Most of the estate's vineyards were already in the Pithon family, but the grapes were not vinified and sold under the Pithon-Paillé name until 2008. This cuvee takes its name from the mosaic of soils (limestone and slate), and sources it’s fruit from 20-30-year-old vines of Chenin Blanc, and are aged in a mix of used oak barrels. Straw, honey, white flowers, yellow apples, lanolin, and hecka mineral. An excellent aperitif!
